Presentation of Carol Vallès’ new still wines 

Join us to discover our new collection of still and natural wines at Carol Vallès.

QUATRE PEUS – Macabeu fermented in french oak barrel 

Grapes harvested by hand from a vineyard older than 40 years, vertically pressed and stepped on foot for 13 hours in a row. Spontaneous fermentation with wild yeast. Aging in a french wood barrel for 6 months.

VUIT MANS – Macabeu fermented in amphora

Grapes harvested by hand from a vineyard called Sogas, with vines older than 50 years. We manually separate all the grains from the stems to do carbonic maceration inside a clay amphora of 350 liters. Spontaneous fermentation with wild yeast. The wine does its aging with its skin during six months, making it an orange wine.

Those wines do not have any added sulfur, they are not clarified nor filtered, respecting the maximum expression of the grape and with the minimal intervention possible. 

We will introduce you to this project with a visit to the wine cellar where you will see where the wines are doing its aging inside the barrel and the amphora. Next, we will walk to the vineyards where those wines were born to taste them and enjoy them with an aperitive of local charcuterie and cheeses from  Cal Miqueló.
