Eight Hands. Four people. Those facts and the quality of the grapes born in our \u201cEstevet\u201d vineyards, older than 40 years, have been the strength that allowed us to create this wine.The 9th of September 2021, at 7:00am in the morning, we harvested by hand and in boxes of 20kg, 662 kilos of Macabeu grapes planted on a soil of calcium and clay. We began to press in a vertical press and we finished this pressin with our feet, two people for 13 hours in a row. The 11th of September we racked the wine and we filled a used French oak barrel of 300 liters. The 14th of September began to spontaneously ferment without any added yeast, only with its own wild yeast. The 5th of October the fermentation ended. During this fermentation in the oak barrel, we got toasty notes and aromas of vanilla. With minimal oxidation, the color keeps being pale and clean. This wine stayed in the barrel untin February next year to get all the aromas of evolution in wood, however we did not allow those aromas to become the main feature of the wine.<\/p>\n<p>This wine doesn\u2019t have any added sulfur, hasn\u2019t been clarified nor filtered. This is a wine that wants to respect the grapes and we worked with minimal intervention possible to do it so. The result is fruit from our old vineyards.<\/p>\n<p>It might have precipitates as it hasn\u2019t been filtered.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>An idea. Eight Hands.
