After a long tradition in the production of family cavas, Joan Carol’s passion and concern led him found Carol Vallès in 1996. So, he decided to settle in the old farmhouse of Can Parellada, acquired by his grandparents more than 100 years ago.

With the indispensable help of Teresa Vallès, Joan Carol began to sell the cavas that they had made with such dedication for years. The “Parellada and Faura”, which bear the surnames of Joan's mother; and then the "Guillem Carol", in honor to his son. Past and future. Tradition and innovation.

The strong commitment to the traditional method, the unique blends and the long aging make that, little by little, the cellar gain a name, reaching various recognitions and collecting prestigious awards.

Second generation

Currently, the second generation, Guillem and his team have taken the helm of Carol Vallès. And it has done so with the same concern, passion and values that saw the birth of the project: a strong commitment to the environment, the long aged cavas, a strong commitment to sustainability and wine tourism.

Can Parellada estate, located in Subirats, the heart of Penedès wine region, covers a small area of 13 hectares in which the family cultivates vineyards of the local varieties in the area. The land is located about 250 m above sea level, and the soils are of calcareous clays. The vineyards of Xarel·lo and Macabeu are the most extensive, with ages reaching 45 years and 70 years. But there are also vineyards of Chardonnay and Parellada. Today, all the vineyards are cultivated in an organic and sustainable way, taking care of the environment.
