After a long tradition in the production of cavas, the passion for wines of Joan Carol led him in 1996 to found Cellars Carol Vallès. He decided to settle in the old farmhouse of Can Parellada, acquired by his grandfathers more than 100 years ago. With the indispensable help of his wife, Teresa Vallès, Joan Carol begins to market the cavas that the family had been producing for years. The “Parellada i Faura”, bearing the surnames of Joan’s mother; and then “Guillem Carol”, who bear the name of his son. Past and future. Tradition and innovation.
The strong commitment to the traditional method, the unique blends and long agings made the cellars of the farm to reach several recognitions and collect prestigious prizes.
Now, the second generation has taken the rudder of the wineries. The same restlessness, passion and values that the project was born are strongly keep: a firm commitment to the environment, the long aging of the cava and a commitment to sustainability.
The Can Parellada farm, located in the municipality of Subirats, covers a small area of 13 hectares in which the family cultivates vineyards of the autochthonous varieties of the area. The lands are located about 250 m above sea level, and the soils are calcareous clays. The vineyards of Xarel·lo and Macabeu are the most extensive, with ages reaching 45 years. In the farm, there are also vineyards of Chardonnay and Parellada.
At the moment, all the farming is already 100% organic.
In recent years, the farmhouse also integrates a country house where you can enjoy the maximum experience of sleeping between vineyards.
At Carol Vallès we offer you the possibility to discover the cellar’s landscape, get to know how do we produce our cavas and take part in out various activities and enotourism experiences.
